The information in the Food Code Reference System was provided by the Retail Food Protection Team, which falls under the FDA’s Center for Food Safety and Applied Nutrition. The Retail Food Protection Team has nearly 3,000 local and state agencies and are responsible for the oversight of nearly 1 million food establishments including restaurants, school cafeterias, correctional facilities and grocery stores to minimize foodborne illness.
There are currently more than 20 entries that cover a range of topics including the required temperature for food storage and the proper cleaning of food equipment. More entries will be added in the future.
